Healthy Crackers

When we are traveling, I have limited options for ingredients. Sometimes it's because there just aren't options available. Sometimes it is because we are in a place for such limited time that to get a bunch of ingredients is a waste.

So, I use ingredients that we have lying around in to make random recipes.

For this one, I was inspired by a book I'm loving right now (simply for opening my mind to Lectins and other information I never knew) - The Plant Paradox.

I used a recipe in the book as a guide, but didn't have all the ingredients, so I adjusted it to my recipe below.

These crackers are delicious right out of the oven and they go fast!

Preheat Oven 350 degrees F

  • 2 Pastured or Omega-3 Eggs

  • 1 teaspoon water

  • 1 Cup Cassava Flour (In the Plant Paradox Recipe, they called for Almond Flour but I didn't have any)

  • 1/2 Cup Coconut Flour

  • 1/2 teaspoon of sea salt

  • A lot of Simply Organic Citrus n' Peel Seasoning Grinder (THIS SPICE MIX IS DELICIOUS!) - I never measured, but I added probably 2 teaspoons (or use any seasoning that you like - in The Plant Paradox Recipe, they called for Italian seasoning)

Mix Eggs & Water together. Seperately, mix remainder dry ingredients. Mix wet & dry ingredients until there are no lumps and it is well mixed. I added a little Extra Virgin Olive Oil here, as it seemed too dry. But you could just add water. (I'm reading that heating any oils makes them rancid and even toxic, so I'm trying not to use oils when cooking if possible.)

Form into small grape sized balls, place on baking sheet and press flat. In The Plant Paradox, they press with the back of a fork to get the 'wafer' like look.

Bake for approximately 20 minutes or until crisp.

Eat & Repeat!
