Back story - so Easter 2015 we went to brunch and had the most delicious Chilled Cantaloupe Soup. I had been meaning to recreate it and never did.
Fast forward and last week there was Honeydew Melon in my Organic Co-op share. It's not something I typically pick up at the store. I have never been a melon fan - although now that I think of it, I've always loved fresh melon juice and that melon soup. I cut up one of the melon and threw it in a freezer bag to have for our smoothies. For the other one, I decided to make Melon Soup about 10 minutes before dinner...luckily I had the Honeydew in the refrigerator so it was already chilled.
This was the easiest soup I've ever made and super delicious. It's a sweeter soup - but super refreshing & cool on a hot summer day!
And it's easy...
Just blend the following ingredients (I used the Nutri Ninja Blender):
1 Honeydew Melon (cut so you can toss into the blender)
Handful of fresh Mint
1 Lime (Peel and throw the lime in the blender)
1 tsp Vanilla Extract
Sprinkle of Sea Kelp Seasoning and/or Sea Salt and/or Pepper (to taste)
(optional, but keep in mind the soup is already pretty sweet) 1 TBSP of Organic Maple Syrup
*Use Organic when possible
Blend (may have to blend in batches) and Chill in the Refrigerator until you are ready to serve. You can garnish it with some mint leaves. (*Side note: The soup didn't keep very well...the taste seemed to change. So I would suggest eating it the same day!)
